Microgreens are known for their high nutrient density. Although their nutritional content can vary slightly depending on the type, most varieties are a rich source of essential minerals such as potassium, iron, zinc, magnesium, and copper. In addition, microgreens are packed with beneficial plant compounds, including antioxidants.
Microgreens are edible seedlings of vegetables and herbs that are typically harvested within 14 days of germination. These young plants usually measure 1-3 inches in length and come in a wide range of colors, making them popular as garnishes among chefs in recent years. Since they are harvested above the soil, microgreens are considered a safe and healthy source of food. Moreover, they are four to forty times more nutrient-dense than their mature counterparts.
According to research, microgreens have a broader range of polyphenols and other antioxidants than their mature counterparts. In a study of 25 commercially available microgreens, vitamin and antioxidant levels were measured and compared to those found in mature leaves listed in the USDA National Nutrient Database. Microgreens are a nutrient-rich option, often containing higher amounts of vitamins, minerals, and antioxidants compared to their more mature counterparts.
Microgreens are gaining popularity, but many people are still unfamiliar with how to use them in cooking. With flavors that vary from carrot to wasabi and colors that range from green to pink, microgreens are extremely versatile. Some of the most common ways to use them include adding them to salads, layering them in sandwiches, garnishing drinks, seasoning soups, juicing them, and incorporating them into stir-fry dishes.
